We had a day off together, which doesn't happen often. It was the perfect rainy day for Scarecrow videos, snacks, bottles of coke and dinner.

my kind of muffin

Several days ago I got a craving for an old snack my dad used to make for me when I was a kid. I have talked about remaking this snack many times in the last several years. I'm not quite sure why I never did. It takes no skill and is impossible to mess up. So, while at the grocery store today I picked up the ingredients for it.

Ingredients 
English Muffins
Cheese
Tomatoes
A1 Steaksauce
-Slice everything, pop it in the oven, bake or broil till cheese is melted well, add dipping sauce on the side.

I added the avocado as a side for some protein. Inside of making this for a snack, I ate it for dinner. I don't have any other food in my kitchen. I'm happy with the recreation. And my stomach doesn't even feel sick from the cheese.

Nothing special about this Easter, not that it ever is. I'm clearly not religious so to celebrate this day is actually pretty silly. In all honesty, I just like the excuse to consume a large meal. This may be the first year I haven't done that. I thought I would at least cook something. Turns out the day didn't go as planned.

So I found myself laying on my bed mid day, with my boys sleeping beside me, searching for homes on MLS and recipes on my favorite food blogs. I stumbled upon a recipe from America's Test Kitchen for Banana Bread and since I had six old bananas in my kitchen and a roommate begging me to make use of them I decided to drag myself to the grocery store for the few ingredients that I didn't have and a pan to cook it in. I've actually never made banana bread on my own. I think when I was a little girl I would help my grandma make it, but that doesn't really count.
The final result:
The house smells amazing.
My bananas were a little too ripe.
When the recipe says drain the liquid from the fruit, DO NOT SKIP THIS STEP. I skipped it because I thought it seemed unnecessary. Turns out it's actually the most important step. So the banana bread tastes great but is too mushy on the inside. I'm gonna try it again this week...or try a different recipe.

Charles has finally given Jim the admiration that he's been waiting for...or he just doesn't understand why he's standing there in his underwear, or taking up half the bed, or slacking on taking him out right away, or feeding him late.

Kimmy's family came to visit so she asked for me to come over for dinner. She made flank steak, roasted red and sweet potatoes, asparagus, and fresh fruit. I helped, but mostly just ate until I had to unbutton my pants.

It was only a measly sixty four degrees yesterday, but I still got a sunburn. I've been waiting for the summer since November.

Disco nap


You know when you spend all day at the beach, catch a little sunburn, head home to shower and moisturize, put on some loose comfy clothes and lay in bed loving that it's late but still day light, and you think to yourself "today was perfect", take a nap and hit the streets...

You remember that summer is the best time of your life every year...

Even though it's not summer yet and I don't have a tan...I'm having almost that exact same feeling.

A good friend moved yesterday, one night earlier than she was supposed to. After living in Seattle for five years she decided New York was calling her back home. I've had some seriously great times with her and I'm sad to see her leave.

experimenting w/ korean food

Today I made Jjambbong (Korean-Chinese Spicy Noodle Soup).

I got the recipe from eating and living, a  Korean food blog I am obsessed with right now. I went to H Mart yesterday to pick up ingredients in preparation for a weekend off, relaxing at home, cooking, and eating. I even went to Daiso this morning for two new soup bowls, spoons, and chopsticks. This dish was really quick and easy. Prepping the meat and veggies took the longest. Since Jim was eating too, I substituted most of the meats and used just pork, chicken and shrimp. We're not really big on clams and squid.

I'm really satisfied with how the dish turned out. Next time I'd add more chili flakes to make it just a touch spicier. Cooking Korean is a new experiment for me. It's been my observation that many of the soup recipes are very similar with just slight variations making it cheap and easy to cook, and best of all, everything is quite healthy.

emmer & rye

Jim and I ate at emmer & rye on Sunday night. After a busy work week he offered to take me for a nice dinner, and I never refuse a delicious meal. Our schedules are completely opposite so we've been eating out too much (which I hate) and this occasion was the first time we went to a restaurant neither one of us had been to. After this tasty experience we decided to break the habit of visiting places we are familiar with and start venturing out to more places we've never been.

This adorable place is located at the top of Queen Anne in one of its trademark houses made restaurant. "Seasonally inspired, locally derived" is the motto at this establishment. I had the wagyu beef with brussel sprouts and black truffle mashed potatoes. So good. It's Seattle Restaurant Week until April 21st. Check out the menu here and they also have a menu for the event this week. I recommend it.

last night.

apparently, watching people scavenging for food makes you want to eat for them.
so we got out of bed to make pancakes. jim even made one for charles with some of his dog food in it. i almost threw up.

two am pancakes are good.
next time i think we need to make twice as many.

I decided to do a little thrifting today since I had no plans and didn't really want any. As usual I listened to my ipod to drown out the noises. I hadn't yet listened to this entire album start to finish (Noah and the Whale). I really like this song.
